Chicken Enchiladas

with Green Sauce

Chicken Enchiladas with Green Sauce are filled with shredded chicken wrapped in soft tortillas and topped with a spicy, fresh, and vibrant salsa verde. It’s a simple recipe with a huge flavor payoff!


Chicken Breasts | Yellow Onion Garlic | Olive Oil | Lime Juice | Salt Salsa Verde | Monterey Jack Cheese Cheddar | Sour Cream | Cilantro Cream Cheese | Tortillas

Cook chicken in boiling water for 20-25 minutes. Then, shred into strips. Heat olive oil and sauté onion until translucent.


Add garlic and salsa verde and simmer for 2 minutes, then remove from heat. Combine shredded chicken, salsa verde, lime juice, salt, cheese, sour cream, cream cheese, and cilantro in a bowl.

Coat the bottom of a baking tray with the remaining salsa verde. Fill each tortilla with chicken mixture, and place in the baking tray.

Pour the remaining sauce over the enchiladas and top with cheese. Bake for 15 minutes until cheese melts.

Serve with tomato, sour cream, and cilantro! Yummm!!
