Ingredients
2cupsAll-Purpose Flour
3tspBaking Powder
½tspBaking Soda

Instructions
In a large mixing bowl, whisk together the flour, baking powder, and salt until evenly combined.
Use your hands or a pastry cutter to mix in the cold butter pieces until the mixture resembles coarse crumbs with pea-sized butter pieces.
Stir in the buttermilk until a thick dough forms. Avoid overmixing to keep the dough light and fluffy.
Transfer the dough to a clean countertop and gently knead it 6–7 times, just until the flour is fully incorporated. You should still see visible butter pieces, which will create flaky layers.
Form the dough into a circle about 1½ inches thick. Use a 2½-inch biscuit cutter to cut out biscuits. Gather and reshape the dough scraps as needed to cut out additional biscuits.
Lightly coat the air fryer basket with nonstick spray. Arrange the biscuits in the basket, leaving about 2 inches of space between each biscuit. Depending on the size of your air fryer, you can fit 4–6 biscuits per batch.
Air fry the biscuits at 400°F for 8–10 minutes, or until they are golden brown on top.
Melt the butter in a small microwave-safe bowl. Brush the hot biscuits with the melted butter for extra flavor and shine.
Biscuits are best enjoyed warm. Serve with butter, jam, honey, or gravy for a delicious treat.
Notes
Keep the butter as cold as possible. Cold butter helps create steam during cooking, which results in light, flaky biscuits. You can even freeze the butter for a few minutes before cutting it into the flour.
Handle the dough gently to avoid overworking it. Over-kneading can lead to dense, tough biscuits. Stop kneading as soon as the dough comes together.
If your kitchen is warm, chill the dough in the fridge for 10–15 minutes before cutting the biscuits. This ensures the butter stays solid.
Air fryer models vary, so check the biscuits at the 8-minute mark. Add more time if necessary, watching closely to avoid burning.
For sweet biscuits, add 1–2 tablespoons of sugar to the dry ingredients. Brush the tops with melted butter and sprinkle with sugar after baking.
Store leftovers in an airtight container at room temperature for up to 2 days. Reheat in the air fryer at 350°F for 2–3 minutes to refresh their texture.
Freeze unbaked biscuits on a baking sheet, then transfer to a freezer-safe bag. Cook from frozen, adding 1–2 extra minutes to the cooking time.
