whole food, gluten-free, soft and chewy peanut butter cookies

  • 1/2 cup natural peanut butter
  • 3/4 cup maple sugar or coconut sugar must be granulated
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  1. preheat oven to 350 degrees.
  2. in a medium bowl, cream peanut butter, sugar, baking soda, and salt until smooth.
  3. stir in egg and vanilla and mix well.
  4. scoop dough by the heaping teaspoon and roll into a ball (cookies may feel greasy).
  5. place cookies on a lined cookie sheet approximately 2 inches apart.
  6. using the back of a fork, gently press down on the tops of the cookies crossways to flatten.
  7. bake for 8-10 minutes, rotating halfway through.
  8. let cookies cool for 5 minutes before moving to a wire rack to cool completely.
  9. store in an airtight container.
