Clean Almond Loaf Bread

  • 2 1/4 cups almond meal or flour
  • 1/4 cup flax meal
  • 1/2 tsp baking soda
  • dash of salt
  • 1 tbsp honey or maple syrup
  • 5 eggs
  • 1 tbsp coconut oil, melted
  • 1 tbsp apple cider vinegar
  • 1 tbsp lime/lemon zest
  • 1 tbsp lime/lemon extract or lemon juice
  1. Preheat oven to 350. Spray a 9x5 loaf pan with cooking spray, set aside.
  2. In a bowl combine all the dry ingredients. Whisk until there are no lumps.
  3. In another bowl combine all the wet ingredients. Pour into the dry ingredients and whisk until well combined - about 3 or 4 minutes.
  4. Pour into the prepared bread loaf pan. Bake for about 30 minutes, or until the toothpick test comes out clean. Allow to cool completely in pan before removing it.
  5. Slice and serve with butter!
