Pressure cooker short ribs

Pressure Cooker Short Ribs taste like the weekend but are fast enough for a hearty weeknight dinner thanks to the pressure cooker. Normally beef short ribs are a low and slow endeavor but with a few recipe tweaks and the magic of the Instant Pot, these short ribs are quick to the table and fall off the bone tender!

  Ingredients:

Beef Short Ribs | Onions Garlic | Carrots | Mushrooms Beef Broth | Olive Oil Thyme | Flour | Salt & Pepper Worcestershire Sauce

Brown Ribs

Set pressure cooker to sauté. Pat dry beef short ribs and sprinkle liberally with salt and pepper. Dust with flour and drizzle olive oil into the pressure cooker. Pressure cook 4-5 minutes per side.

Cook Vegetables

Remove browned ribs and add garlic, onions, carrots, thyme mushrooms, and salt and pepper to taste and allow to soften, stirring occasionally. Add ribs back to the pot, as well as the beef broth.

Cook ribs on high pressure for 35 minutes. Then let them sit for 5-6 minutes and remove them from the pot. Mix flour with beef broth until smooth. Add to the pot and stir until gravy is thickened, then return the ribs and coat in gravy.

Make Gravy

Serve hot over mashed potatoes or egg noodles.  Enjoy!
