Healthy Potato Chowder with Mushrooms

Healthy, vegetarian slow cooker recipe.

Ingredients
  • 1/2 cup onion chopped
  • 1/4 cup butter
  • 2 TBL flour
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 2 cups water
  • 3 cups mushrooms cleaned and sliced
  • 2 cups potatoes peeled and chopped in 1 - 2 inch cubes
  • 1 cup celetry chopped
  • 1 cup carrots sliced
  • 2 cups milk I use whole milk
  • 1/2 cup Parmesan cheese grated
Instructions
  1. In a medium sized skillet, melt butter then sauté the onion and celery until tender.
  2. Remove from heat and add the flour, salt and pepper. Stir well and then place in a slow cooker.
  3. Add the water, potatoes, mushrooms and carrots to the slow cooker. Stir well.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. When the potatoes are tender add the milk and parmesan cheese.
  5. Cook on high for another 30 minutes
