Albondigas soup is a traditional Mexican dish featuring spicy beef meatballs, tender veggies, and aromatic herbs in a savory beef broth. 

  Ingredients:

Ground Beef | Rice | Garlic | Parsley Paprika | Egg | Chili Powder | Cumin Mint Leaves | Salt | Pepper | Onion Olive Oil | Carrots | Beef Broth Canned Diced Tomatoes | Potatoes

Form the Meatballs

Mix all the ingredients for the meatballs into a large bowl. Divide into 16 balls, then cover with film paper and refrigerate.

Prepare the Soup

Heat olive oil in a large saucepan. Add onion and carrots and sauté until soft, then add minced garlic. Add the remaining ingredients, cover, and boil for 10 minutes.

Add the prepared meatballs and reduce heat to medium-low. Cook until potatoes are fork-tender and meatballs are cooked through.

Finish the Soup

Serve warm and garnish with fresh parsley. Enjoy!
