My comment is on the rub as I followed a different smoking method. The rub was simply awesome. I was extremely skeptical but I  decided to make the plunge because I’m fond of fennel. I did not like the smell or taste after I blended the spices however I pressed on and the finished product on the cooked chops was amazing. This spice blend perfectly harmonizes and finishes the smoke and charcoal flavoring. Go figure. I left nothing but bones. This is now my go to rub for thick bbq pork chops. Next time I may finish with a nice sweet and tangy bbq sauce on top of this amazing rub.]]></description>

If you love your husband this much, buy him a remote thermometer so he doesn’t have to open the egg to take the temperature. Opening the egg allows the air to cool, which actually contracts the meat and makes it less tender. You can get him a MEATER+ for about $100, or if you love him as much as he loves his BGE get him a CyberQ which will actually control the airflow to the smoker for his longer smokes. Trust me - it’s the best gift you can get a guy who loves to smoke!]]></description>
