Ingredients
  • 4pound Top Sirloin Roast
  • 1tbsp coriander seeds
  • 1tbsp fennel seeds
  • 1tbsp black peppercorns
  • 1tbsp kosher salt
  • 1tsp ½cumin seeds
Instructions
  1. Preheat oven to 475 degrees.
  2. Combine all spices and crush with a mortar and pestle, spice grinder, or strong husband with a rolling pin.
  3. Liberally apply spice mix to the whole roast, including the sides, patting the spices into the roast.
  4. Place roast on a wire rack in a roasting pan or sheet pan with sides, fat side up.
  5. After 15 minutes, reduce the oven temperature to 300 degrees and allow the roast to continue cooking.
  6. Cook until the roast reaches 140 degrees for rare or 145 degrees for medium rare. Any higher and the meat will start to become tough. A meat thermometer is the most reliable way to determine doneness. But a 4 pound roast will take approximately 1 hour and 15 minutes to cook, depending on your desired temperature.
  7. After removing from the oven, let the roast rest for 10 minutes before cutting against the grain and serve!
